We've said it before, and we'll say it again...pork and sweetness go together like peas and carrots, or peanut butter and jelly, or...well, you get the idea!

This is one of our go-to meals for a quick, simple and incredibly tasty weekday dinner. The sweetness of the apples and red peppers pair perfectly with the juicy pork…it’s a classic combo you’ll make many times again.

For juicy sausages with a nicely browned exterior, we always like to cook them on low-to-medium heat for about 15 minutes and then finish them on high heat.

We love to serve this with a tangy sauerkraut or kimchi.  It provides balance to the sweet + savory aspects of this dish. Not only that, the fermented vegetables add some healthy nutrients & probiotics!

INGREDIENTS:


Servings: 6 - 8

2 tbsp cooking oil (we use organic olive oil)
1 medium size white onion, diced or cut into strips
3 cloves of garlic, minced
Pinch of kosher salt
2 red bell peppers, sliced into strips
½ small hot pepper (optional), diced
2 apples (Gala or a baking variety works well), diced
~2.5 lbs of heritage breed pork sausages (8 sausages)
10 tbsp of sauerkraut or kimchi to serve on the side


PREPARATION:

STEP 1
Set a large heavy skillet (cast iron works well) on the stove on low-to-medium heat.  At the same time, set a large frying pan on medium heat and add oil.

STEP 2
Once skillet is warm, add sausages and cook for 7-8 minutes, flip and cook for another 7-8 minutes on the other side.

STEP 3
Once oil in frying pan is hot, add onion and cook/stir for a few minutes until beginning to turn translucent.  Add garlic and a pinch of salt and mix.

STEP 4
Once onion and garlic have cooked together for 2 minutes, add the peppers (and the hot pepper for a spicy version).  Mix with onions & garlic for a few minutes.

STEP 5
Add the apple to the onions and peppers and mix.  Cook for another 5-8 minutes or until the apples and peppers have completely softened.

STEP 6
If sausages haven’t developed a nice browned exterior (to your personal preference), increase heat to high and sear the sausages on all sides for about 2 minutes.

STEP 7
Serve the sausages whole or slice them up and mix together in the frying pan with the apples, onions + peppers to serve.
