It's really hard not to have a good time while making (and eating) pizza.

If you're feeling a little lazy, you can always cut down the prep by using a premade sauce, but we always prefer mixing our own - it's easier than you think!

We did however cheat a little and bought a premade dough at a local Italian spot - try to find one with as few ingredients as possible.

After all, the secret to great pizza is great ingredients - so let's get started!

 

INGREDIENTS:

Servings: 2 - 4

16 oz canned tomatoes (pureed)
5 oz tomato paste
1 tsp kosher salt
1 tsp fresh ground pepper
1-2 tbsp each: garlic powder, onion powder, dried oregano, dried basil, dried thyme (or any Italian herbs you have on hand)
1 ball of pizza dough
2 tbsp olive oil
1 large sweet yellow onion, sliced
1 lb heritage pork sausage, removed from casing
1 bunch of broccolini or broccoli rabe (cut into 2 inch pieces)
4 cloves of garlic, minced
1 tsp chili flakes
1 ball fresh mozzarella, sliced in strips


PREPARATION:

STEP 1
Add can of tomatoes to a blender or food processor and pulse until nearly smooth. Mix with can of tomato paste + all your Italian herbs. Season to taste and set sauce aside.

STEP 2
Prep the dough according to directions (different types will vary slightly). For ours, we let the dough reach room temperature, drizzled with oil and then shaped. Once molded into your desired shape and thickness we par baked it alone in the oven for 10 mins.

STEP 3
While the dough is baking, prep your toppings. Add oil to a sautee pan on medium heat, add sliced onions and stir often until golden brown. In another pan on medium high, add the crumbled sausage and break apart with a wooden spoon. Once sausages are slightly browned (~5 mins), add minced garlic, chili flakes and broccolini. Cover and cook until broccolini is tender (~10 mins).

STEP 4
Once the dough is out of the oven, you're ready to assemble! First, spoon over tomato sauce, followed by cheese, then onions, and finally the sausage & broccolini.

STEP 5
Place pizza back in the oven and cook until the cheese is melted and the crust is slightly browned (~10 mins).

STEP 6
Serve immediately with any extras you like - we served ours with pickled jalapeños, dried oregano, honey + spicy oil.
